Karen’s Scuffles

These are one of our family favourites at Christmas time.

Mix together:

7 cups flour

1 tsp. salt

3 Tbsp. sugar

Then cut in 1 ob. butter into flour mixture until butter is size of small peas.  Set aside.

2 Tbsp. yeast

1 cup milk

4 eggs

Proof yeast in 1/2 cup warm water and 1 Tbsp. sugar.  When frothy add to milk and egg mixture.  Add the combined ingredients to the flour mixture and combine until you have a firm dough.  Add more milk or flour as needed.

Cover and let rise in fridge overnight.

Divide dough into 8 and roll each section out in sugar and cinnamon like a pie crust.  Cut into wedges and roll up from wide end to narrow.(like a croissant)

Bake at 350F for about 15 minutes until scuffles spring back to the touch and are golden brown on the bottom.
