adapted from Cape Breton News recipe.
1 cup oat flour
1 cup spelt flour
all purpose flour or oat flour for rolling out
2 cups oats
1/4 cup coconut palm sugar
1/2 cup brown sugar
2 tsp. baking powder
1 tsp cinnamon
1 cup butter
Place all dry ingredients in food processor and process quickly to mix. Add butter and pulse until coarsely chopped into the flour oat mixture. Put contents of processor into a large mixing bowl and slowly add water while mixing with hands until dough forms a firm ball.
Divide dough in 4 and roll each piece out using extra flour to prevent from sticking to board or rolling pin.
Use a cookie cutter to cut and place on parchment papered baking sheet.
Bake at 350 until golden brown or about 15 minutes.
Cool, store in a dry cool place in a sealed container.
