Refried Beans, eggs and toast

First I took about 1/2 cup of refried kidney beans and placed them in a frying pan.  I added 3 Tbsp of water and 1 Tbsp. walnut oil and stirred to thin the beans a little.  Next I stirred in 1 tsp. dried cilantro leaf, 1/4 tsp. chipotle powder, salt and pepper.

In the meantime I sliced off a thick chunk of Walnut Fig bread and toasted it while at the same time place one egg in the frying pan.

When the toast was toasted and the egg was cooked just to the way a like it, (almost hard) I assembled my creation on a plate.

First I placed the toast in the middle of the plate and then spread the refried beans the toast. I topped the beans with the egg and a little guacamole and a few springs of fresh cilantro.
