1/2 cup butter
1/2 cup sugar
1 tsp. vanilla
1 1/4 cups flour
1/2 cup toasted, ground hazelnuts
Chocolate Pear Jam
Preheat oven to 350.
Cream butter and sugar in mixing bowl.
Add egg and vanilla and continue to mix.
Add salt and flour and mix until well combined. Chill dough for 1 hour.
Toast hazelnuts in oven or pan. Cool and then grind or chop finely. Place in small bowl.
Remove the dough from refrigerator and form into one inch balls. Place on parchment covered baking sheet.
Using thumb, press firmly in the centre of each ball forming an indentation for the jam to be placed in later.
Place in oven and bake for 10 minutes. Remove from oven and gently press down firmly in the centre with the end of a wooden spoon or a wine cork.
Cool cookies on pan.
When ready to serve, carefully spoon Pear Chocolate Jam into the indentation of each cookie.
It is best to store cookies without the jam centers.
