Gingerbread Cookies
I got this recipe off Prairie Story blog. I am a sucker for ginger cookies and always try new recipes when I see them. These cookies are as promised, crisp on the outside and chewy on the inside. I think of them more as ginger cookies as opposed to gingerbread cookies which make me think they would be rolled and cut cookies. Nevertheless they are delicious.
1/2 cup margarine, softened
1/2 cup brown sugar
1/2 cup white sugar
1/4 cup molasses
1 egg
2 1/4 cups flour
2 teaspoons baking soda
1 teaspoon ground ginger
2 teaspoons cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon salt
– Combine first five ingredients. Beat well.
– Sift dry ingredients together, then add to wet. Stir until just combined, don’t over work dough.
– Form into balls and roll in white sugar. Place on baking sheet and flatten slightly.
– Bake @ 375° for 10 minutes.
